Development of a Fish Sauce Using the Marine Resources of the St. Lawrence

KLKT Inc. is a young company developed by Vietnamese people who want to create a cultural and culinary bridge between their original roots and the deep roots of Quebec. They want to introduce Quebecers to fish sauce, an age-old condiment from their native country, and make it an essential part of Quebec cuisine. Creating a traditional Vietnamese product in their adopted country in harmony with Quebec's culture and cuisine requires the company to be flexible and adaptable, and to take into account Quebec's realities: simplicity, practicality, ease and comfort.

After several years of challenges, in the spring of 2023, the company introduced its fish sauce, a traditional sauce with no compromise on quality, flavour or food safety. Its fish sauce is made entirely from fish from the St. Lawrence, which are under-valued and neglecte. KLKT's fish sauce adds value to the marine resources of the St. Lawrence, developing them and at the same time redirecting them from landfill sites sites to the consumer table.

This represents a great opportunity to contribute to Quebec's collective marine wealth and to open up Quebecers' pantries to the world.
